Ingredients
- 1/2 pound pimientos de Padrón
- 2 tablespoons olive oil
- Coarse sea salt, to taste
- Type of fire: Direct
- Grill heat: high
Directions
- Start 1 chimney full of charcoal. Once the coals are fully lit and wearing that gray ash coating, pour them onto the coal grate and spread them evenly over the whole surface. Put the cooking grate on, close the grill, and let it heat for 5 minutes. Clean the grilling grate and oil it well.
- Add the peppers to a medium bowl, pour in the olive oil, and toss until they are nicely coated. Lay the peppers on the grill and cook until they are blistered all over, 1-3 minutes per side.
- Move the peppers to a serving plate. Sprinkle on salt to taste, then serve immediately.
