Ingredients
- 1/3 lb thick cut bacon, cut into 1/2-inch dice
- 1 1/2 lbs Brussels sprouts
- 2 medium shallots, thinly sliced
- Kosher salt
- Freshly ground black pepper
- Type of fire: Direct
- Grill heat: high
Directions
- Fill a medium saucepan with water and set it over high heat until it boils. Stir in 1 tablespoon of salt, add the Brussels sprouts, and cook them for 5 minutes. Drain them, then put them aside.
- Set a 10-inch skillet over medium-high heat and add the bacon. Cook, stirring as needed, until the bacon has crisped and released its fat. Transfer the bacon to a large bowl, then pour off the bacon fat, leaving 1 tablespoon in the skillet.
- Add the shallots to the skillet and cook them until they are lightly browned. Move them into the bowl with the bacon.
- Put the Brussels sprouts in a large bowl and toss them with the reserved bacon fat, along with salt and pepper to taste. Arrange them on the grill and cook until each side has a little char, about 4 to 5 minutes per side.
- Transfer the grilled Brussels sprouts to the bowl with the bacon and shallots, and toss everything together. Spoon onto a serving dish and serve immediately.
