Grilled Pineapple Mojito Mocktail
Charred pineapple, fresh mint, lime, and sparkling water make a bright mojito-style mocktail with smoky-sweet depth.

Ingredients
- 1/2 small pineapple, peeled, cored, and cut into 1/2-inch planks
- 2 teaspoons neutral oil
- 1/3 cup fresh mint leaves, plus sprigs for garnish
- 1/4 cup fresh lime juice
- 2 tablespoons agave nectar, plus more to taste
- 1 1/2 cups chilled coconut water
- 2 cups chilled sparkling water
- Ice
- Lime wheels, for garnish
Directions
- Heat a grill or grill pan to medium-high. Brush the pineapple lightly with oil, then cook until the edges are browned and the fruit is juicy and fragrant, about 3 to 4 minutes per side. Let it cool, then chop it into small pieces.
- Add the chopped pineapple, mint, lime juice, and agave to a pitcher. Muddle until the pineapple releases plenty of juice and the mint is fragrant, without grinding the mint into tiny pieces.
- Stir in the coconut water and taste. Add a little more agave if the drink needs it, keeping in mind that the sparkling water will lighten the flavor.
- Fill four glasses with ice. Divide the pineapple mixture among the glasses, top with sparkling water, and stir gently. Garnish with mint sprigs and lime wheels.
