Spiced Pineapple Lime Mocktail
A frothy pineapple-lime mocktail with almond orgeat, toasted cumin syrup, black pepper, and a gentle cayenne kick.

Ingredients
- 1 teaspoon whole cumin seeds
- 1/2 cup water
- 1/2 cup granulated sugar
- 8 whole black peppercorns
- 2 ounces fresh pineapple juice
- 1 ounce chilled brewed green tea
- 3/4 ounce fresh lime juice
- 1/2 ounce orgeat
- 1/2 ounce cumin-pepper syrup
- 1 pinch cayenne pepper
- Ice
- 1 ounce chilled sparkling water
- Pineapple wedge, for garnish
Directions
- Make the cumin-pepper syrup by warming the cumin seeds in a small dry saucepan over medium heat until they smell nutty and toasted. Add the water, sugar, and peppercorns, then stir until the sugar dissolves. Simmer gently for 5 minutes, remove from the heat, and let it steep for 10 minutes. Strain and chill before using.
- Add the pineapple juice, green tea, lime juice, orgeat, cumin-pepper syrup, and cayenne to a shaker with ice. Shake until the outside of the shaker feels cold and the drink looks lightly frothy.
- Strain into a chilled glass filled with fresh ice. Top with sparkling water, give it one gentle stir, and garnish with a pineapple wedge.
