Rosemary Gimlet Mocktail
A crisp, herbal lime mocktail with rosemary syrup and Seedlip Garden 108 for a polished, gin-style sip without alcohol.

Ingredients
- 1/2 cup water
- 1/2 cup granulated sugar
- 2 fresh rosemary sprigs
- 2 ounces Seedlip Garden 108
- 3/4 ounce fresh lime juice
- 3/4 ounce rosemary syrup
- 1/2 ounce chilled strong green tea
- 1 small pinch fine sea salt
- 1 rosemary sprig, for garnish
- 1 lime wheel, for garnish
Directions
- Combine the water, sugar, and rosemary sprigs in a small saucepan over medium heat. Stir until the sugar dissolves, then remove the pan from the heat and let the syrup cool. Strain into a clean jar and chill before using.
- Add the Seedlip Garden 108, lime juice, rosemary syrup, green tea, and sea salt to a cocktail shaker. Fill the shaker with ice, cover, and shake until the outside feels very cold.
- Strain into a chilled coupe or small cocktail glass. Garnish with a rosemary sprig and a lime wheel, then serve right away.
