Grilled Ramps
A quick turn on the grill gives ramps smoky edges, silky bulbs, and just enough bite for a simple spring side.

Ingredients
- 32 ramps, cleaned and trimmed
- 2 tablespoons extra virgin olive oil, plus more for serving
- Kosher salt and freshly ground black pepper
Directions
- Spread the ramps out on a rimmed baking sheet. Add the olive oil, sprinkle with salt and pepper, and toss everything together until the ramps are evenly slicked.
- Start 1 full chimney of charcoal. Once the coals are glowing and coated in gray ash, empty them into the grill and bank them on 1 side of the charcoal grate. Put the cooking grate on, close the grill, and let it heat for 5 minutes. If you’re using a gas grill, turn half of the burners to their highest setting, close the lid, and heat for 10 minutes. Scrape the grate clean and brush it with oil.
- Lay the ramps over the hot side of the grill. Cook them for about 2 minutes, turning now and then, until they’re softened and charred in places. Move them to a serving platter, finish with a little more olive oil, and serve.
