Ingredients
- 1 Tbsp olive oil
- 1 lb lean ground beef
- Salt and freshly ground black pepper
- 2 tsp minced garlic
- 2 1/2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp onion powder
- 1/2 cup tomato sauce
- 1/3 cup low-sodium chicken broth
- 8 corn tortillas
- 3/4 cup cheddar cheese or shredded Mexican cheese blend
- 2 Roma tomatoes or 1 cup grape tomatoes, diced
- 2 cups shredded romain or iceberg lettuce
Directions
- Warm 1 Tbsp olive oil in a 12-inch non-stick skillet set over medium-high heat. Drop the beef into the pan in large pieces, leaving a little space between them, then season with salt and pepper.
- Cook the beef undisturbed until the underside is browned, about 3 minutes. Turn it over, crumble it up, and keep cooking until it is nearly done, about 2 minutes.
- Stir in the garlic, chili powder, cumin, onion powder and cayenne pepper. Continue cooking until the beef is fully cooked, about 1 minute.
- Add the chicken broth and tomato sauce. Lower the heat to medium-low and let the mixture simmer until the liquid cooks down into a thicker sauce, about 3 – 5 minutes.
- Spoon the warm beef into warmed tortillas, then top with lettuce, cheese, tomatoes and any other toppings you like.
