Ground Turkey Stir Fry

Ingredients

  • 1/4 cup soy sauce
  • 1/2 Tbsp toasted sesame oil
  • 1/2 Tbsp brown sugar
  • 1 pinch red pepper flakes, optional
  • 1 Tbsp water
  • 2 bell peppers
  • 4 green onions
  • 2 oz. spinach
  • 2 Tbsp cooking oil of choice
  • 2 cloves garlic, minced
  • 19 oz. ground turkey
  • 1/4 cup chopped peanuts
  • 2.5 cups cooked brown rice

Directions

  1. Stir together the soy sauce and toasted sesame oil, then add the brown sugar, red pepper, and water; mix until the sugar has melted into the sauce. Put it to the side for now.
  2. Cut the bell peppers into dice, and slice the green onions.
  3. Warm the cooking oil in a very large skillet set over medium heat. When the oil is hot, add the ground turkey along with the minced garlic. Cook, stirring as you go, until the turkey is done and the skillet no longer has liquid collecting in the bottom, 8-10 minutes.
  4. When the turkey is cooked and the extra moisture has cooked away, stir in the bell pepper and green onions. Cook, stirring, for about 2 minutes more, then add the spinach and keep cooking only until it has wilted halfway, 1-2 minutes.
  5. Add the stir fry sauce to the skillet. Keep stirring and cooking until the turkey and vegetables are glossy with sauce and the spinach has completely wilted, about 2 minutes more.
  6. Spoon about 1 cup of the stir fry mixture over 1/2 cup rice, then finish with chopped peanuts scattered on top.
