Herb-Spiced Mixed Nuts

Ingredients

  • 3 to 4 cups pecans, walnuts, and almonds
  • 2 tablespoons unsalted butter, olive oil, or coconut oil
  • 1 tablespoon chopped rosemary
  • 1 tablespoon chopped sage
  • 1 tablespoon chopped thyme
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 2 tablespoons maple syrup
  • 1 teaspoon kosher salt

Directions

  1. Heat the oven to 350 degrees F. Spread the nuts across an ungreased rimmed baking sheet, then toast them until fragrant, about 8 to 10 minutes. Take them out of the oven and let them cool just a bit.
  2. In a small saucepan set over low heat, melt the butter. Pull the pan off the heat, then stir in the rosemary, sage, thyme, cayenne, maple syrup, and salt. If you are using oil instead, warm it gently for a short time too.
  3. Transfer the warm nuts to a medium bowl. Pour the herb butter over them and use a spatula to turn everything together until the nuts are well coated.
  4. Serve them warm, right away. They are a little sticky on your fingers, and completely worth it.
