Honey Garlic Butter Roasted Carrots

Ingredients

  • 2 pounds carrots
  • 1/3 cup butter
  • 3 tablespoons honey
  • 4 garlic cloves, minced
  • 1/4-1/2 teaspoon salt
  • Cracked black pepper
  • 2 tablespoons fresh chopped parsley

Directions

  1. Heat the oven to 425°F (220°C). Mist a large baking sheet lightly with nonstick cooking oil spray, then set it aside. Cut off the carrot ends, then slice the carrots into thirds.
  2. Warm the butter in a pan or skillet over medium heat until melted. Stir in the honey and cook until it blends fully into the butter. Add the garlic and stir for 30 seconds, just until it smells fragrant.
  3. Add the carrots to the pan and toss them through the honey garlic butter. Cook for another minute so the sauce can tighten slightly around the carrots, then season with salt and pepper.
  4. Move the carrots onto the prepared baking sheet and spread them out in a single layer so they roast evenly. Toss them again so the coating is distributed all over.
  5. Roast for 20 minutes, or until a fork slides into the carrots easily. Switch to the broiler, or grill, on high heat for 2-3 minutes to brown and crisp the edges.
  6. Optional: Return the carrots to the skillet and let them bubble in the sauce over high heat for 5 minutes, until the sauce reduces into a glaze.
  7. Add a little more salt and pepper if you like, then scatter parsley over the top. Transfer the carrots to a serving platter and serve.
