Ingredients
- 1 pound red bliss or new potatoes
- 2 slices thick-cut bacon
- Salt and fresh ground black pepper
- 1 tablespoon fresh chives, minced
Directions
- Heat your oven to 450ºF. If your oven has a convection setting, this is a good moment to use it. Scrub the potatoes, set them on a rimmed baking sheet, and slide them into the oven for 3 minutes so the skins dry thoroughly. Take the potatoes out, but put the baking sheet back in the oven while it continues heating.
- Slice the potatoes into even wedges, making 6 or 8 wedges from each potato, depending on size. Coat the wedges with the bacon fat, then season generously with salt and pepper. Once the oven is fully heated, carefully pull out the hot baking sheet and arrange the potatoes in 1 layer with a cut side facing down.
- Roast the potatoes for 20 minutes, or until they are nicely browned. While they are still hot, toss them with the chives. Serve with ketchup or mayonnaise.
