How to Make Poori

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil, plus more for frying
  • 1/2 cup warm water
  • Oil, for deep frying

Directions

  1. In a large bowl, add the warm water, 2 tablespoons vegetable oil, and salt. Stir everything together until the salt has fully disappeared into the liquid.
  2. Tip in the flour and mix until a soft dough comes together. Knead it for about 5 minutes, stopping when it feels smooth and springy. Cover the bowl with a damp cloth, then leave the dough to rest for 30 minutes.
  3. Cut the dough into 8 equal portions, then shape each one into a ball. Dust your work surface lightly with flour and roll each ball into a thin round about 6 inches across.
  4. Pour oil into a deep skillet and warm it over medium-high heat to 375°F (190°C). Carefully lower one dough round into the hot oil and cook it for 1 minute per side, until it is puffed and golden brown. Lift it out with tongs or a slotted spoon, then set it on paper towels to drain. Continue the same way with the remaining dough rounds. Serve warm or at room temperature with chutney, yogurt sauce, or whatever you like alongside.
