Japanese Noodles with Shimeji Mushroom
Japanese noodles are tossed with shimeji mushrooms, garlic, miso and soy for a quick, savory bowl with plenty of umami.

Ingredients
- Salt
- Garlic
- Water
- Soy sauce
- Pepper
- Chopped parsley
- Mushrooms
Directions
- Fill a large saucepan with water, bring it to a boil, and cook the noodles as directed on the package. While they cook, warm the oil in a skillet over low heat, then add the garlic cloves. Cook just until the garlic smells aromatic, about 30 seconds.
- Increase the heat, add the shimeji mushrooms, and sauté them until they turn tender. Reduce the heat again, then stir in a ladleful of the noodle cooking water, the soy sauce, and the miso paste. Mix until the miso has fully melted into the sauce. Season with salt and pepper, then bring the sauce to a simmer.
- Drain the noodles and transfer them into the sauce. Toss until the noodles are evenly coated, then finish with chopped parsley and serve.
