Lemon Coconut Bars

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/2 cup lemon juice
  • 1 tsp baking powder
  • 3/4 cup shredded coconut

Directions

  1. Heat the oven to 350 degrees. In a medium bowl, stir together the flour and powdered sugar until the mixture looks even. Add the butter with a food processor and pulse until you have little pea-size crumbs. If there is no processor in your kitchen, let the butter soften to room temperature, then work it into the flour mixture with your hands until everything is thoroughly blended.
  2. Lightly coat a 9×13 inch glass casserole dish with non-stick spray. Tip the flour, butter, and sugar mixture into the dish, spread it out evenly, and press it down with your hands until it is packed into a crust. Bake for 15 minutes.
  3. While the crust is in the oven, mix the eggs, granulated sugar, lemon juice, and baking powder in a bowl. You can use the same bowl here. Whisk well, until the sugar dissolves. The lemon juice will make the baking powder foam a bit, and that is fine.
  4. When the crust is done, give the filling another quick whisk, then pour it over the crust. Scatter the shredded coconut over the top, and bake everything for 20 more minutes, or until the top is golden brown. Let it cool for 10 minutes before you cut it.
