Ingredients
- 1/2 head of cabbage, shredded
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup roasted peanuts, roughly chopped
- 2 tablespoons fresh cilantro, chopped
Directions
- Grab a medium bowl and add the cilantro, peanuts, black pepper, salt, honey, olive oil, and lime juice. Stir it all together until the dressing looks even and the peanuts and herbs are nicely distributed.
- Tumble in the shredded cabbage and toss until every bit gets a glossy coat of the lime mixture.
- Set a large skillet over medium-high heat, then transfer the coleslaw into the pan. Let it cook for 3-4 minutes, stirring here and there, until the cabbage softens a little and picks up some blistered spots.
- Bring it to the table warm, or chill it first if that is more your mood.
