Lime Shrimp Dragon Noodles

Ingredients

  • 1/2 lb frozen peeled & deveined shrimp
  • 2 packs ramen noodles
  • 2 Tbsp sriracha
  • 2 Tbsp soy sauce
  • 2 Tbsp brown sugar
  • 1 lime
  • 2 Tbsp butter
  • 2 cloves garlic
  • 2 green onions
  • Handful fresh cilantro

Directions

  1. Put the shrimp into a colander and run cool water over them until they are thawed. Leave them there to drain until you need them. In a small bowl, mix the sriracha, soy sauce, brown sugar, and about 1 Tbsp of lime juice, then keep the sauce nearby.
  2. Add water to a medium sauce pot, cover it, and set it over high heat until it boils. When the water is bubbling, drop in the ramen noodles, leaving out the flavoring packet, and cook until the noodles are tender. Pour the noodles into a colander to drain. If you are reusing the shrimp colander, wash it first with soap and water.
  3. As the water heats, mince 2 cloves of garlic. Put the butter and garlic in a large skillet and cook over medium heat until the garlic has softened, about 1 minute. Add the shrimp and keep cooking until they are pink and opaque, about 3-5 minutes. Take the skillet off the heat.
  4. After the noodles have drained, transfer them to the skillet with the shrimp and pour the sauce over everything. Toss until the noodles are evenly coated. Finish the dragon noodles with sliced green onion, cilantro leaves, and a squeeze of lime.
