A bacon, egg and cheese crustless quiche with green onions and a creamy baked center, ideal when you want big flavor without a pastry crust.
Prep 15 min · Cook 45 min · Total 1 hr · Makes 1 9-inch quiche (8 slices)

Ingredients
- 8 slices bacon
- 1/2 cup sliced green onions, white part preferred
- 1 1/2 cups grated Swiss cheese
- 1/2 cup grated Mozzarella cheese
- 1/4 cup coarsely grated Parmesan cheese
- Fresh ground black pepper to taste
- 1/4 tsp. Spike Seasoning, see notes
- 1/8 tsp. Cayenne Pepper, optional
- 8 eggs
- 3/4 cup half and half
- 2 T diagonally sliced green onion for garnish, green part preferred
Directions
- Heat the oven to 350F/180C, and coat a 9-10 inch pie dish with nonstick spray.
- Cook the bacon any way you like until it is very crisp. Drain off as much grease as possible with paper towels, then crumble it. If using Costco pre-cooked bacon, microwave it for 1 minute and blot away the fat.
- Cut the green onions, and grate the cheeses if they are not already grated.
- Add the bacon, green onions, Swiss cheese, Mozzarella cheese, and Parmesan cheese to the prepared pie dish in layers. Sprinkle with ground pepper, Spike Seasoning, and Cayenne Pepper.
- Beat the eggs until the whites and yolks are fully blended, then whisk in the half and half.
- Pour the egg mixture into the pie dish over the layered ingredients. Use a fork to carefully mix everything just enough to distribute it evenly.
- Bake for 45 minutes, or until the middle is set and the top is as browned as you like. The quiche will rise in the oven, then settle a bit as it cools into a dense, custardy texture.
- Serve warm, with green onions over the top if desired.
- Store leftovers in the refrigerator for several days, and warm them in the microwave.
