Prep 20 min · Cook 35 min · Total 1 hr · Makes 8 cabbage rolls

Ingredients
- 1 head of cabbage
- 1 lb. ground beef
- 1/2 cup diced onion
- 1/4 cup low carb Thousand Island dressing
- 3/4 cup sauerkraut, drained and rinsed
- 2 tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups shredded Swiss cheese
Directions
- Heat the oven to 350 degrees F (175 degrees C).
- Add the ground beef to a large bowl, then combine it with the onion, Thousand Island dressing, sauerkraut, Worcestershire sauce, garlic powder, salt, pepper and cheese until the filling is evenly mixed.
- Slice the cabbage into 8 wedges, trimming away the core from each piece. Lower the wedges into a large pot of boiling water and simmer for 5 minutes, just until they loosen and soften. Drain them, then set them aside until they are cool enough to handle.
- Spoon 1/8 of the beef mixture onto each cabbage wedge, then wrap the cabbage snugly around the filling. Arrange the rolls in a 9x13 inch baking dish with the seams tucked underneath.
- Bake for 30 minutes, until the filling is cooked through and the tops have taken on a little color. Serve warm with more Thousand Island dressing, if desired.
