Marinated Portobello Mushroom Burgers

Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp soy sauce
  • 1 Tbsp apple cider vinegar
  • 1 tsp brown sugar
  • 1/4 tsp oregano
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tsp smoked paprika
  • Freshly cracked pepper
  • 2 portobello mushroom caps
  • 2 buns
  • 1 cup spring mix
  • 1 tomato
  • 1/4 red onion, sliced into rings
  • 4 Tbsp mayonnaise

Directions

  1. In a small bowl, whisk the olive oil with the soy sauce and apple cider vinegar. Stir in the brown sugar, smoked paprika, oregano, onion powder, garlic powder, plus freshly cracked pepper, using about 10 cranks of a pepper mill.
  2. Twist the stems off the portobello mushrooms. Set the caps in a shallow dish with the gills facing upward. Spoon some marinade into the gills, turn the mushrooms over, and pour the remaining marinade across the tops. Marinate for 30 minutes, turning them now and then.
  3. Warm a grill or grill pan over medium to medium-high heat. When it is hot, add the marinated portobello mushrooms and cook for about 7 minutes on each side, until the mushrooms are tender and have given off most of their liquid.
  4. Assemble the burgers on buns with the toppings you prefer. Mayonnaise, sliced tomato, onion rings, and lettuce or spring mix are the classic combination here.
