Ingredients
- 4 to 6 sheets of kosher for Passover matzo
- 1 cup kosher for Passover margarine
- 1 cup brown sugar, firmly packed
- 12 ounces high quality dark or semi-sweet kosher for Passover chocolate
- 1 vanilla bean
- 1/2 teaspoon kosher salt
- 20 Kosher for Passover marshmallows
Directions
- Move an oven rack to the center and heat the oven to 350 degrees F. Tear off 2 pieces of aluminum foil, each approximately 20 inches long. Stack them, then fold the long edges over together several times to create one sealed seam. Use this larger piece of foil to line a 12- by 17-inch rimmed baking sheet.
- Fit the matzo into the prepared pan in a snug single layer, placing the sheets side by side without letting them overlap. Tuck smaller pieces of matzo into any open spaces along the bottom of the pan, then set it aside. Chop the chocolate into pieces roughly the size of standard chocolate chips and set that aside as well. Split the vanilla bean lengthwise, scrape out the seeds, and keep them ready.
- Melt the margarine in a medium saucepan over medium heat, stirring often with a spatula. When it is fully melted, stir in the brown sugar and vanilla. Continue cooking until the mixture turns uniformly deep brown and starts bubbling, about 5 minutes. Take the pan off the heat and pour the caramel mixture over the matzo, spreading it with the spatula.
- Bake the matzo until the margarine mixture is bubbling and the crackers are beginning to brown lightly, 5 to 10 minutes. Take the pan out of the oven and scatter the chocolate evenly over the top, letting the residual heat soften it for a few moments. Use the spatula to smooth the chocolate over the matzo so the pieces are fully coated. Refrigerate until the chocolate is firm, then sprinkle with salt, break into 20 squares, and set aside.
- Heat the oven to 350 degrees F. Line a jelly roll pan with parchment paper. Set the marshmallows on the pan with a couple inches of space between them. Slide the pan into the oven and watch the marshmallows closely, either through the oven window or by checking every 15 to 30 seconds, taking them out to rotate as needed until they are as browned as you like. Place the marshmallows on the matzo crack and turn them into s’mores sandwiches. Serve immediately.
