Miso-Marinated Flank Steak
A savory miso-ginger flank steak roasts fast, then gets a quick broil for a deeply browned crust and tender slices.

Ingredients
- Salt
- Garlic
- Kosher salt
- Ginger
Directions
- In a bowl, whisk the miso, mustard, ginger, kosher salt, garlic, and 2 Tbsp. oil until you have a smooth paste. Spread it over both sides of the steak, then wrap the steak tightly in plastic and refrigerate for at least 30 minutes and up to overnight.
- Set an oven rack in the upper third of the oven and heat the oven to 450 degrees. Oil a baking sheet with a brush. Take the steak out of the marinade, shake away the extra, and set it on the prepared baking sheet.
- Roast the steak until it reaches medium, flipping it once during cooking, about 13 minutes. Switch on the broiler and broil the steak, keeping a close eye on it so it does not burn, until it is richly browned, about 1 minute per side.
- Rest the steak for 10 minutes, then cut it into thin slices against the grain.
