Morning Glory Baked Oatmeal

Ingredients

  • 1 1/2 cups unsweetened apple sauce
  • 2 large eggs
  • 2 Tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 tsp baking powder
  • 2-3 carrots, shredded
  • 1 can crushed pineapple in juice, drained
  • 1/3 cup shredded coconut, sweetened
  • 1/3 chopped walnuts
  • 1 cup milk, dairy or soy
  • 2 1/2 cups old-fashioned rolled oats

Directions

  1. Heat the oven to 375 degrees. In a large bowl, whisk the apple sauce with the eggs, then mix in the brown sugar, vanilla, cinnamon, salt, and baking powder.
  2. Peel the carrots, then grate them with a cheese grater. Drain off most of the liquid from the pineapple can; feel free to save it for smoothies or cocktails.
  3. Stir the carrots, pineapple, coconut, and walnuts into the apple sauce mixture until everything is evenly combined. Pour in the milk and stir once more. Add the dry oats last, mixing until the oats are fully coated with the wet mixture.
  4. Transfer the oat mixture to an 8x8 or 9x9 inch casserole dish sprayed with non-stick spray. Bake, without covering, for 45 minutes. Serve it hot, or refrigerate it for later. Eat the baked oatmeal cold or warm it in the microwave.
