Ingredients
- 6 large Navel or Valencia oranges
- 1 1/2 cups granulated sugar
- 1 cup water
- 3 pieces of star anise
- 4 1/2 cups crushed ice
Directions
- Use a vegetable peeler to remove the zest from 1 orange, then slice that zest into fine strips and set it aside. Combine the sugar, water, star anise, and orange zest in a small saucepan over medium heat. When the mixture begins to bubble and the sugar is fully dissolved, take the pan off the heat and let the syrup cool as it infuses. If you want it to cool faster, set the saucepan in an ice bath.
- Peel all of the oranges, including the zested one, taking care to remove all of the pith. Working with a peeled orange in your hand, cut along the membrane on one side of a segment, then along the membrane on the other side, slicing toward the center so the fruit section comes free. Divide the orange segments between 6 dessert bowls.
- Add crushed ice and the cooled syrup to each bowl. Serve right away.
