Panko Crusted Honey Mustard Salmon

Ingredients

  • 4 salmon fillets
  • 1 1/2 Tbsp dijon mustard
  • 1 1/2 Tbsp honey
  • 1 clove garlic minced
  • 3/4 cup Panko bread crumbs
  • 2 Tbsp chopped fresh parsley
  • 1 tsp lemon zest
  • 2 Tbsp olive oil
  • Salt and freshly ground black pepper

Directions

  1. Heat the oven to 400 degrees. Mist a 13 by 9-inch baking dish with non-stick cooking spray, then put it aside.
  2. In a small bowl, whisk the mustard, honey, and garlic until smooth. In a shallow dish, combine the Panko bread crumbs, parsley, and lemon zest. Pour the olive oil over the crumbs and toss until everything is lightly and evenly coated.
  3. Set up one piece of salmon at a time. Brush the top with the honey mustard mixture, then add a light sprinkle of salt and pepper, going easy because you’ll season the other side too. Turn the salmon over into the crumb mixture so the coated side is down and the crumbs can cling. Brush the exposed side with more honey mustard, season lightly with salt and pepper, then turn it in the crumbs to coat. Move the fillet to the prepared baking dish, and do the same with the remaining salmon fillets.
  4. Bake in the heated oven for 13 – 15 minutes, until the salmon is cooked through. Serve warm with lemon wedges from the zested lemon, if desired.
