Ingredients
- 1 pizza dough, homemade or store bought
- 1 Tbsp olive oil
- 1 clove garlic, finely minced
- Salt and freshly ground black pepper
- 3 oz prosciutto
- 4 oz ricotta cheese
- 5 oz fresh mozzarella, diced into small cubes
- 2 oz asiago cheese, shredded, 1/2 cup
- 1 1/2 medium fresh peaches
- 1 cup balsamic vinegar
- 1/4 cup honey
- Flour, for dusting
- 1/3 cup slightly packed fresh basil leaves, chopped
Directions
- Set a pizza stone in the oven, then heat the oven to 450 degrees. Let the stone warm in the oven for 30 minutes, and plan to build the pizza during roughly the last 10 minutes.
- While the oven heats, add the balsamic vinegar and honey to a large, deep skillet. Place it over medium heat and simmer the mixture until it cooks down to a little less than a 1/2 cup, about 15 minutes. A silicone spatula works well here because you can sweep along the bottom and sides as you stir. Stir now and then for the first 5 minutes, then stir continuously for the final 10 minutes.
- Dust a piece of parchment paper, about 14-inch long, with a light coating of flour. Pull and shape the dough into a 12 1/2-inch circle. In a small bowl, combine the olive oil and garlic, then brush it across the dough, spreading the garlic as evenly as you can. Add a light sprinkle of salt and pepper. Arrange the prosciutto over the crust in an even layer, setting the pieces next to each other, with a little overlap if needed. Dot the pizza with small spoonfuls of ricotta, then scatter on the mozzarella cubes and asiago.
- Halve the peaches and remove the cores. Put the peach halves cut-side down and slice them a bit thicker than 1/4-inch. Arrange the peach slices evenly over the pizza. Use a pizza peel to move the pizza, still on the parchment, onto the hot pizza stone. Bake for 10 – 12 minutes, until the edges have taken on a pale golden color.
- Take the pizza out of the oven, add the fresh basil, and drizzle it with the honey balsamic reduction. Refrigerate any extra reduction. Slice the pizza and serve it warm.
