Pumpkin French Toast

Ingredients

  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 4 eggs
  • 2 Tbsp packed light-brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 9 slices Texas toast
  • Butter, for griddle

Directions

  1. Heat an electric griddle to 350 degrees, or use a non-stick skillet over medium heat. In a mixing bowl, whisk the milk, pumpkin puree, eggs, brown sugar, vanilla, cinnamon, nutmeg and ginger until the mixture is smooth and even, then pour it into a shallow dish.
  2. Melt a little butter on the griddle. Dip each piece of bread into the pumpkin-egg mixture, giving it a few seconds to drink it in and gently squeezing so it reaches the center, then turn it over and coat the other side. Move the bread to the griddle and cook until the underside is browned. Lift the french toast, butter the griddle again, flip, and cook the second side until browned as well.
  3. Serve warm with butter and maple syrup.
