Ingredients
- 2 tablespoons vegetable oil
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1 onion, cut into thin wedges
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro, optional
Directions
- Peel the garlic and ginger, then slice them as finely as you can. Add them to a large cold non-stick frying pan with 1 Tbs. of olive oil, set the pan over a medium heat, and stir often as they cook. When the slices are crisp and pale gold, lift them out and set them aside, keeping that flavored oil in the pan.
- Gather the asparagus into a neat bundle and cut away the woody ends, then lay the spears in the hot pan. Sprinkle the steaks with sea salt and black pepper, nestle them in with the asparagus, and raise the heat to high. Cook for just 3 minutes, turning the steaks and asparagus often so everything gets its turn against the pan.
- Add the black bean sauce and 1 Tbs. of red wine vinegar, then toss everything together for 1 minute. At this point the steaks will be medium-rare; if you prefer them cooked further, keep going to your liking. Slice the steaks, plate everything up, and finish with the crisp garlic and ginger scattered over the top.
