Ingredients
1 tablespoon olive oil
1/2 onion, diced
1 pound ground beef
2 tablespoons taco seasoning
2 cups shredded cheese
1 can black beans, drained and rinsed
2 cups crushed potato chips
1/2 cup salsa
1/4 cup sour cream
Chopped fresh cilantro, for garnish
Directions
Preheat oven to 375 degrees F. Heat olive oil in a large skillet over medium-high heat. Add the diced onion and cook until softened, about 5 minutes. Add the ground beef and taco seasoning to the skillet and cook until beef is browned, about 8 minutes. Drain any excess fat from the pan. Spread the crushed potato chips on a large baking sheet lined with parchment paper or aluminum foil. Top with black beans, cooked ground beef, shredded cheese, salsa, and sour cream. Bake for 15 minutes or until cheese is melted and bubbly. Garnish with chopped fresh cilantro . Serve warm and enjoy!.
