Fluffy Garlic Herb Mashed Potatoes
Garlic and dried herbs turn simple russet mashed potatoes into a smooth, savory side that comes together with pantry staples.

Ingredients
- 2.5 lbs. russet potatoes
- 1/2 tsp salt
- 4 Tbsp butter
- 1/2 cup whole milk
- 1 tsp dried parsley
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt
- freshly cracked pepper
Directions
- Peel the russet potatoes, then chop them into 1-inch cubes. Transfer the pieces to a colander and wash them thoroughly under cool water.
- Move the rinsed potatoes into a pot, then pour in water until it sits 1 inch above them. Stir in 1/2 tsp salt, put on the lid, set the heat to high, and let the water come to a boil.
- Cook the potatoes until they are extremely soft, about 7-10 minutes. Pour them into a colander to drain, then give them a quick rinse with hot water.
- In the same pot you used for the potatoes, combine the butter, milk, and garlic herb seasoning. Warm everything over low heat, stirring, until the butter is melted and the milk is hot.
- When the milk mixture is hot, return the potatoes to the pot and take it off the heat. Mash with a potato masher until mostly smooth, then switch to a hand mixer and whip just briefly, until the potatoes are light and fluffy. Taste, add more salt if they need it, and serve.
