Rosemary Honey Grapefruit Mocktail
A tart, herbal Seedlip drink with lime, grapefruit, green tea, and a rosemary-coriander honey syrup for a bitter-sweet finish.

Ingredients
- 1/4 cup honey
- 1/4 cup water
- 1 rosemary sprig
- 1/2 teaspoon coriander seeds, lightly crushed
- 2 ounces Seedlip Garden 108
- 3/4 ounce fresh lime juice
- 1/2 ounce fresh grapefruit juice
- 1/2 ounce chilled strong green tea
- 1/2 ounce rosemary-coriander honey syrup
- 1 small pinch fine sea salt
- Ice
- Lime twist or rosemary sprig, for garnish
Directions
- Combine the honey, water, rosemary, and coriander seeds in a small saucepan over medium-low heat. Warm just until the honey dissolves, then remove from the heat and let it steep for 15 minutes. Strain and chill the syrup before using.
- Add the Seedlip Garden 108, lime juice, grapefruit juice, chilled green tea, rosemary-coriander honey syrup, and sea salt to a shaker. Fill the shaker with ice and shake until the outside feels very cold.
- Strain into a chilled coupe or small cocktail glass. Garnish with a lime twist or a rosemary sprig and serve right away.
