Salmon with Thyme Butter
Foil-packet salmon with thyme butter and shallots cooks up tender, savory, and weeknight-easy.

Ingredients
- 4 tablespoons butter, at room temperature
- 2 tablespoons chopped thyme
- 4 shallots, minced
- 2 pounds salmon, divided into 4 equal fillets
- Salt and pepper
Directions
- Heat the oven to 400 degrees.
- In a small bowl, whisk the butter with the thyme until the two are fully blended.
- Pull off 4 sheets of aluminum foil, making each one twice as large as a piece of salmon.
- Set 1 fillet on each sheet of foil. Separate the butter into 4 portions, then spread 1 portion over the top of each fillet, covering the surface of the fish.
- Scatter the chopped shallots over each fillet, then season each one with salt and pepper.
- Lift the foil ends so they meet above the fillet, then twist the foil closed to seal the packet.
- Bake until the salmon is just cooked through, about 18-20 minutes.
- Take the salmon out of the foil packet and serve it warm.
