Seared Halibut with Verde Sauce

Ingredients

  • 4 6-ounce halibut fillets
  • Olive oil, salt and pepper
  • For the sauce:
  • 1 cup fresh mint leaves
  • 1 cup fresh basil leaves
  • 1 cup Italian parsley leaves
  • 1 head roasted garlic, pulp mashed
  • 1/2 cup olive oil
  • Salt and pepper, to taste
  • Red pepper flakes, to taste, optional

Directions

  1. Heat the oven to 275 degrees. Rub the fish with olive oil, then sprinkle it with salt and pepper. Get a grill pan or cast iron skillet smoking hot, then add the fish. As soon as it goes in, jiggle the pan gently so the fillets do not grab, then let them sit undisturbed for at least 2 minutes so they can brown properly. Turn the fish over and move it to the oven for 10 minutes, adding a little more time if the fillets are on the thicker side.
  2. For the sauce, add the herbs and the mashed roasted garlic pulp to a food processor and pulse until coarsely chopped. With the machine running, pour in the olive oil and process until the sauce looks like pesto. Season to taste, then spoon it over the cooked fish.
