Simple Unsweetened Applesauce

Ingredients

  • 3 1/2 pounds mixed apples, cored and roughly chopped
  • 2 cups water
  • Pinch of salt

Directions

  1. Put the apples and water into a large pot and set it over the heat. Once the mixture boils, turn it down until it is barely bubbling. Leave it uncovered and cook until the apples collapse easily when pressed with tongs, about 15 minutes.
  2. Blend the apples in the pot with an immersion blender, stopping when the sauce is as smooth or chunky as you like. If it looks thinner than you want, continue cooking it gently over low heat for 5 more minutes so it can thicken. Season with salt to taste. Serve it warm, or refrigerate it for several hours if you prefer it cold.
