Ingredients
- Flour tortillas
- Grated mozzarella cheese
- Tomato sauce
- Fresh basil leaves, thinly sliced
Directions
- Warm a large cast iron skillet or griddle over medium high to high heat. Set a flour tortilla right in the middle.
- As soon as the tortilla starts ballooning or bubbling, turn it over and lower the heat to medium low. Use the point of a knife or the tines of a fork to poke the bubbles so they settle down a bit.
- Scatter grated mozzarella over the tortilla in a light, even layer. When the cheese has melted about half-way, add a thin coating of tomato sauce, smoothing it across the cheese with the back of the spoon. Finish with a little more cheese over the sauce.
- When the tortilla’s edges have taken on some color, which means the underside is browning nicely, take the pan off the heat.
- Put a lid over the pan for about a minute or so, letting the warmth still in the pan soften and melt the cheese on top.
- Add the fresh sliced basil. Slide the pizza onto a plate, then cut it with a pizza wheel or a sharp knife.
- Serve immediately.
