Ingredients
- 4 cups old-fashioned oats
- 1 1/2 cups all-purpose flour
- 1 cup finely crushed graham cracker crumbs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 3/4 tsp salt
- 1 cup unsalted butter, softened
- 1 cup packed light-brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup milk
- 2 tsp vanilla extract
- 23 large marshmallows
- 46 milk chocolate or special dark Hershey's Kisses
Directions
- In a mixing bowl, whisk the oats, flour, graham cracker crumbs, baking powder, baking soda, cinnamon, and salt for 30 seconds, then put the bowl aside. In the bowl of an electric stand mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar until the mixture looks light and fluffy. Add the eggs 1 at a time, mixing well after each one goes in. Mix in the milk and vanilla extract. Turn the mixer to low, add the dry mixture gradually, and mix only until the dough comes together. Cover the bowl with plastic wrap and chill for 1 hour, or as long as 4 hours.
- Preheat the oven to 375 degrees. Take the dough out of the refrigerator, scoop it into rounded tablespoonfuls, about 26 grams each, and roll each portion into a ball. Arrange the dough on baking sheets lined with Silpat or parchment paper, leaving 2-inches between cookies. Press the cookies down lightly, then bake in the heated oven for 7 – 8 minutes. They should be baked just shy of done, since they will go back into the oven for about another minute.
- As the cookies bake, cut the marshmallows into halves with scissors and unwrap the Hershey's Kisses. Take the cookies out of the oven and let them cool for 5 minutes. This 5 minutes is optional, but it can help the marshmallows keep their shape a bit better. Set a marshmallow on each cookie with the cut side down. Turn on the oven broiler, move the oven rack several levels below the broiler element, and return the marshmallow-topped cookies to the oven. Watch them closely, because they can brown fast, and broil for about 1 minute, more or less as needed. Pull them from the oven and gently press 1 kiss into the middle of each toasted marshmallow. Serve warm, or let them cool and store them in an airtight container.
