Soy-Maple Glazed Salmon

Ingredients

  • 4 skinless salmon fillets
  • 1/3 cup real maple syrup
  • 3 Tbsp soy sauce, not low-sodium
  • 2 cloves garlic, minced
  • Freshly ground black pepper and chopped green onions, optional

Directions

  1. Whisk the maple syrup, soy sauce, and garlic in a mixing bowl. Set the salmon in a baking dish, then pour the maple mixture over the fillets so they’re evenly coated. Cover the dish and chill it for 30 minutes, turning the salmon once at the halfway point.
  2. When the salmon has 10 minutes left to marinate, heat the oven to 400 degrees. Coat a 13 by 9 inch baking dish with cooking spray, then move the salmon into the prepared dish. Keep the marinade.
  3. Bake the salmon in the hot oven until it is cooked through, about 15 minutes.
  4. While the salmon bakes, pour the marinade into a small saucepan. Bring it to a boil over medium-high heat, stirring often. After it boils, lower the heat a bit and let it cook for several minutes, stirring often, until it has reduced to 1/4 cup.
  5. Serve the salmon warm, spooning 1 Tbsp of the maple soy glaze over the top of each piece. Add black pepper and green onions if you’d like; the soy sauce usually covers the salt, but you can add some if it tastes like it needs it.
