Ingredients
- 2 tablespoons butter
- 1/4 cup light brown sugar
- 2 tablespoons honey
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of ground cloves
- 2 fresh pineapples, peeled, cored and cut into wedges or cubes
- Juice of 1 lime
Directions
- Heat the oven to 300ºF (150ºC).
- Arrange the pineapple in a baking dish that fits it fairly closely, while still giving you enough space to spoon juices over the fruit and turn the pieces as they roast.
- In a bowl, stir together the orange juice, lime juice, liquor, jam, vanilla, if you’re using it, and allspice, or whichever spices you’ve chosen.
- Pour the mixture over the pineapple, then roast it for 1 1/2 to 2 hours. Every 20 minutes, turn the pineapple quarters and baste them with the pan juices. It’s ready when the outside is caramelized; the exact timing will shift with how ripe and juicy the pineapple is, so check in as it cooks and trust what you see and smell, au pif.
