Roast Chicken with Caramelized Shallots

Ingredients

  • 1 whole chicken
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 4 large shallots, thinly sliced
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 cup white wine or chicken broth

Directions

  1. Heat the oven to 425ºF (220ºC.)
  2. In a large baking dish that can fit the chicken pieces in a single layer, stir together the olive oil, vinegar, soy sauce, shallots, and a little salt and pepper.
  3. Add the chicken and turn it through the mixture until every piece is well coated with the shallots. Arrange the pieces with the skin facing up.
  4. Roast until the tops begin to take on color, about 20 minutes. Flip the chicken pieces, then spoon any pan juices and shallots from the dish back over the top. Return the dish to the oven for another 20 minutes, or until the chicken is cooked through and the shallots are deeply caramelized.
  5. Take the dish out of the oven and toss everything with the chopped parsley.
