Spiced Red Wine Cranberry Sauce

Ingredients

  • 12 ounces fresh or frozen cranberries
  • 2/3 cup white sugar
  • 2/3 cup dry red wine
  • 3 tablespoons maple syrup
  • 1 tablespoon molasses
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon orange zest
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon Kosher salt
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice

Directions

  1. Add the cranberries, sugar, wine, syrup, molasses, ginger, orange zest, cinnamon, salt, nutmeg, and allspice to a medium saucepan. Set it over medium-high heat and bring everything to a boil.
  2. Cook the mixture, stirring now and then, until the cranberries begin to burst, about 5 minutes. Use a wooden spoon to mash the berries against the side of the pan, then keep cooking until they collapse further and the sauce turns thick and jammy, about 5 minutes more.
  3. Take the pan off the heat and cool the sauce for 30 minutes. If it is thicker than you want, stir in water as needed. Serve right away, or transfer it to an airtight container and refrigerate it. Serve it chilled or warm it back up.
