Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened but still slightly firm
- 1 1/4 cups granulated sugar
- 2 oz. cream cheese, softened but still slightly firm
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 3/4 – 1 cup sprinkles
Directions
- Heat the oven to 350 degrees. Cover your baking sheets with parchment paper or silicone baking mats.
- In a mixing bowl, whisk the flour, baking powder, baking soda and salt together, then put the bowl aside.
- In the bowl of an electric stand mixer with the paddle attached, beat the butter, sugar and cream cheese until the mixture is smooth and evenly blended.
- Add the egg, vanilla extract and almond extract, and mix until incorporated.
- Pour in the flour mixture and mix just until the dough comes together. If the dough is too sticky to handle because of higher humidity, chill it for 30 minutes.
- Add the sprinkles to a small mixing bowl. Scoop the dough in 1 1/2 Tbsp portions, roll each portion into a ball and coat it in the sprinkles.
- Move the dough balls to the prepared baking sheets, leaving 2-inches between them.
- Use the bottom of a cup or glass to press each cookie down about halfway.
- Bake the cookies one sheet at a time in the heated oven for about 9 minutes. They should still look a little underdone when you take them out.
- Cool the cookies on the baking sheet, then move them to a wire rack to finish cooling. Store them in an airtight container.
