Sriracha Pimento Cheese Spread

Ingredients

  • 8 oz extra sharp cheddar, shredded
  • 4 oz cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 3 Tbsp sriracha, or to taste
  • 1 cup diced roasted red peppers
  • 1 green onion

Directions

  1. In a large bowl, combine 1 Tbsp sriracha with the shredded cheddar, cream cheese, and mayonnaise.
  2. Cut the roasted red peppers into a fine dice, then chop the green onion finely. Scrape both into the bowl.
  3. Using a hand mixer, beat the mixture until the cream cheese is worked all the way through. It will still have texture from the shredded cheese and diced peppers, which is exactly right.
  4. Give it a taste, then add more sriracha until it suits you. I used 3 Tbsp sriracha total. The heat will build a bit after the spread has chilled.
  5. Serve it right away, or refrigerate it until you are ready to eat. In the refrigerator, the spread is good for 4-5 days.
