Sugar-Free Flourless Cookies with Almond Flour and Flaxseed

Ingredients

  • 1/2 cup softened butter
  • 10 T Golden Monkfruit Sweetener
  • 1/4 tsp. kosher salt
  • 1 tsp. vanilla
  • 3 T flaxseed meal
  • 2 1/2 cups almond flour
  • 3 T Golden Monkfruit Sweetener
  • 1 1/2 tsp. ground cinnamon

Directions

  1. Heat the oven to 300F/150C, and cover a large baking sheet with parchment paper. Beat the softened butter with the Golden Monkfruit Sweetener until combined. The dough gets very firm, so a stand mixer is the easier choice if you have one.
  2. Add the salt and vanilla, and mix briefly. Add the Flaxseed Meal and Almond Flour, then beat until the dough holds together. It may look dry and crumbly in the beginning, but keep going until it turns into a stiff dough.
  3. Stir the 3 T Monkfruit sweetener together with the ground cinnamon, then spread the mixture onto a plate. Scoop the dough into slightly rounded tablespoons with a measuring spoon, roll each piece in the Monkfruit and cinnamon mixture, and arrange them in rows on the parchment.
  4. Press each cookie with a fork until it is about 1/2 inch thick. Bake for about 30 minutes, until the cookies are just beginning to brown and feel only lightly firm.
  5. Leave the cookies on the baking sheet for about 20 minutes to cool. They will firm up more as they sit. These cookies freeze well.
