Ingredients
- 1 pkg sugar-free Jello, any flavor that appeals to you
- 1 cup boiling water
- 2/3 cup ricotta cheese
- 1/2 cup cold water
Directions
- Spoon the ricotta cheese into a bowl, then use a fork or whisk to stir it until it loosens up just a bit.
- Set four glass dishes, each slightly over 1/2 cup, on the counter so they’re ready when it’s time to pour in the hot Jello mixture.
- Empty the powdered Jello into a large glass measuring cup. Add the boiling water and whisk for 1-2 minutes, until the Jello has completely dissolved.
- Mix in the ricotta, then add the cold water and stir everything together.
- Pour the mixture into the glass bowls and move them to the refrigerator so the pudding can set.
- After about 2 hours, when the mixture is partly firm, cover the dishes with cling wrap.
- Serve cold, right from the individual dishes.
