Ingredients
- 1 cup melted butter, margarine, or coconut oil; do not use margarine that has water as the first ingredient.
- 7 T cocoa powder
- 4 eggs, well beaten
- 2 cups Stevia in the Raw Granulated Sweetener
- 1/2 cup Lakanto Golden Monkfruit Sweetener
- 1 1/3 cups white whole wheat flour
- Pinch of salt
- 2 tsp. vanilla
- 1 cup walnuts, hand broken
Directions
- Heat the oven to 350F/180C. Put the butter or whichever fat you’re using in a large microwave-safe bowl, with plenty of room for the rest of the batter, and melt it in the microwave.
- Add the cocoa powder to the melted butter and stir until the mixture is smooth and dark.
- In a small separate bowl, beat the eggs thoroughly. Mix in 2 cups Stevia in the Raw, or the sweetener you’re using, until combined.
- Add 1/2 cup Lakanto Golden Monkfruit Sweetener, or another 1/2 cup of your preferred sweetener, and stir once more.
- Pour the egg mixture into the cocoa mixture and stir them together.
- Add the flour, salt, and vanilla, then stir just until everything comes together.
- Break the walnuts by hand until you have 1 cup, then fold them gently into the batter.
- Coat a glass baking dish with nonstick spray. Scrape in the batter and press it into an even layer so the brownies bake flat. The dish used here was about 8″ x 11″.
- Bake for 30 minutes. Cool the brownies in the pan for 10-15 minutes before you cut them.
