Ingredients
- 1 large bunch of Swiss chard, washed and chopped
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/2 cup vegetable broth or white wine
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Directions
- Heat the oven to 375 degrees F (190 degrees C).
- Combine the Parmesan cheese, breadcrumbs, and red pepper flakes in a medium bowl, then put the bowl aside.
- Warm the olive oil in a large skillet over medium heat, then cook the garlic and onion until they begin to soften, about 5 minutes. Stir in the Swiss chard and continue cooking until it has wilted, about 3 minutes more.
- Spoon the chard mixture into a 9x13 inch baking dish, then pour the vegetable broth or white wine over the top. Scatter the Parmesan cheese mixture evenly over everything and bake for 25 minutes, until the surface is golden brown.
- Serve hot, seasoning with salt and pepper to taste.
