Tamago Kake Gohan

Ingredients

  • 1 cup cooked hot white rice
  • 1 egg
  • Soy sauce
  • Kosher salt
  • MSG powder, such as Aji-no-moto or Accent, optional
  • Mirin, optional
  • Hondashi
  • Furikake
  • Thinly sliced or torn nori, optional

Directions

Scoop the rice into a bowl, then press a shallow well into the middle. Crack the whole egg into that well. Add soy sauce, 1/2 teaspoon, along with a pinch each of salt and MSG; if you’re using mirin, add 1/2 teaspoon, and if you’re using Hondashi, add a pinch. Using chopsticks, beat and fold briskly until the egg is fully worked through and the rice looks light yellow, foamy, and airy. Taste, then tweak the seasoning as needed. If using furikake and nori, scatter them over the rice; make a little hollow on top, and finish with the other egg yolk, if using. Serve right away.
