Thai Turkey Meatloaf

Ingredients

  • 2 lbs ground turkey
  • 4 cloves garlic
  • 3-4 whole green onions
  • 2 inches fresh ginger
  • 3 Tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 2 large eggs
  • 1.5 cups cooked jasmine rice
  • 1/2 cup brown sugar
  • 2 Tbsp ketchup
  • 2 Tbsp sriracha sauce
  • 1 Tbsp rice vinegar

Directions

  1. Set the ground turkey in a large bowl. Thinly slice the green onions and mince the garlic, then add both to the turkey with the soy sauce and sesame oil. Peel the ginger, then use a fine cheese grater to grate it right into the bowl. Stir until the seasonings are worked through the meat.
  2. Add the eggs and cooked jasmine rice; white rice is fine if you need to swap it in. Mix again until everything is fully combined.
  3. Cover a baking sheet with foil and coat it with non-stick spray. Transfer the turkey mixture to the prepared sheet and form it into a loaf.
  4. Heat the oven to 375 degrees. When the oven is ready, slide in the loaf and bake for 30 minutes. As it bakes, make the glaze by stirring the brown sugar, ketchup, sriracha, and rice vinegar together in a small bowl.
  5. When the first 30 minutes are up, take the loaf out and spoon half the sriracha glaze across the top. Return it to the oven for another 30 minutes. Add the rest of the glaze over the loaf, then bake for a last 15 minutes. Check the middle with a meat thermometer; it should register 160 degrees Fahrenheit.
  6. Let the meatloaf sit for 10 minutes before you slice it.
