Ingredients
- 2 Cups Bread Flour *all purpose is fine
- 1 Teaspoon Kosher Salt
- 1 Cup Warm Water
- 1 1/8 Teaspoon Instant Yeast
- 1/2 Teaspoon Sugar
- Olive Oil
- 1 Teaspoon Fresh Rosemary
- 1 Teaspoon Fresh Parsley, chopped
- 1/2 Teaspoon Fresh Thyme leaves
- Maldon Flaked Sea Salt
Directions
- Add the flour and salt to a glass bowl, then stir them together. In a glass measuring cup, combine the warm water, yeast and sugar, and leave it alone for a minute. Pour that mixture into the flour and use a wooden spoon to stir just until the dough gathers together.
- Wrap the bowl snugly with plastic wrap and move it to the fridge for 8 hours or up to overnight. Take the bowl out of the refrigerator.
- Drizzle olive oil into an 8" round cake pan. Set the dough in the middle of the pan, folding the ends underneath it. Cover the pan with plastic wrap and let the dough rise for 2 hours.
- Heat the oven to 450 degrees. When the dough has risen, it should reach across the pan. Add another drizzle of oil over the top, then press your fingers into the dough to make deep dimples all the way down to the pan, without tearing through the dough. Scatter the herbs and salt over the top.
- Put the pan in the oven, immediately lower the heat to 425, and bake for 22-24 minutes, until the focaccia is golden.
