Ingredients
- 4 cups water
- 1 large red bell pepper, cored, seeded, and cut into 1/8-inch dice
- 1 large yellow bell pepper, cored, seeded, and cut into 1/8-inch dice
- 1 large orange bell pepper, cored, seeded, and cut into 1/8-inch dice
- 1/4 cup white wine vinegar
- 1/3 cup white sugar
- 1 1/2 teaspoon yellow mustard seeds
- 1 teaspoon kosher salt
- 1/4 teaspoon celery seeds
Directions
- Pour 4 cups of water into a small saucepan and set it over high heat until it boils. Take the pan off the heat, stir in the diced peppers, and let them sit in the hot water for 5 minutes. Drain the peppers well in a fine mesh strainer.
- Return the empty saucepan to the stove and add the vinegar, sugar, mustard seeds, salt, and celery seeds. Set it over medium-high heat and bring the mixture to a boil, stirring until the sugar has dissolved.
- Stir the peppers back into the pan and reduce to a simmer. Cook, stirring now and then, until only a small amount of liquid is left, 15-20 minutes.
- Spoon the relish into a jar and let it cool a bit. Cover it and refrigerate until fully chilled. Store in the refrigerator for up to 2 weeks.
