Triple Vanilla Blondies

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, I used salted, plus 1/2 tbsp melted butter for baking dish
  • Seeds of 1 vanilla bean I sell them!
  • 1 cup packed light-brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3/4 cup vanilla white baking chips

Directions

  1. Heat the oven to 350 degrees. Tuck aluminum foil into an 8 by 8-inch baking dish, then coat it with 1/2 tbsp melted butter and set it aside. If lifting the bars out neatly is not a concern, skip the foil and butter the dish directly.
  2. In a medium saucepan set over medium-low heat, melt the 1/2 cup butter with the vanilla bean seeds, stirring often. When the butter has melted, take the pan off the heat and stir in the light-brown sugar. Let the mixture cool for 5 minutes.
  3. While that cools, whisk the flour, baking powder, and salt together in a mixing bowl, then set the bowl aside. Once the butter mixture has cooled a bit, use a wooden spoon to mix in the eggs and vanilla extract.
  4. Add the dry ingredients to the butter mixture and stir just until combined. Fold in the vanilla baking chips, then pour the batter into the prepared baking dish and smooth it into an even layer.
  5. Bake until the surface is golden and a toothpick comes out clean, about 28 – 32 minutes. Let the blondies cool in the baking sheet for 5 – 10 minutes, then use the foil edges to lift them out of the pan. Cool completely on a wire rack before cutting into squares, or serve warm with Vanilla Ice Cream and caramel sauce.
